Sand Castle Cake

“A Castle of Our Own” on Hallmark Channel was a sweet, coastal themed movie, all about new beginnings. The sand castle contest was merely a metaphor, as the parts that had fall apart can always be re-built. In the spirit of new beginnings, and of course, summer, I made a castle cake!

Ingredients:

-White cake mix

-2 drops blue food coloring

-salted carmel sauce

-2 cans salted caramel frosting

-3-4 sleeves graham crackers turned into crumbs

-1 box regular ice cream cones

-1 box sugar cones

Directions:

Make cake mix according to box directions. Add two drops of blue food coloring. You can stop stirring while it still looks swirly to create an ocean effect.

Prepare two 9X13 round cake pans with oil and flour. Split the cake batter in half and pour each half into each pan.

Bake according to box directions.

While it bakes, use a food processor to make the graham crackers into fine crumbs.

Let cake cool.

Fill a bowl with graham cracker crumbs.

Cover as many ice creams cones as you would like to include on your sand castle and cover them in frosting. Then roll and cover in graham cracker crumbs.

Once cake is cooled, take out of pans and poke holes with a skewer all over the tops. Drizzle salted caramel into the holes.

Spread a thin layer of frosting on top of the first layer and then place the second layer on top.

Spread frosting on entirety of cake and cover in graham cracker crumbs.

Add your crumb- covered cones to make it look like a sand castle.

Add chocolate rocks or candy sea shells for extra decoration. Enjoy!
