Scarecrow Cake Pops

These adorable Scarecrow Cake Pops are inspired by Hallmark Channel’s Pumpkin Regatta Romance. Made with pumpkin cake, cream cheese frosting, candy melts, and a few fun decorations, they’re an easy and festive treat for fall parties, harvest celebrations, or a cozy Hallmark movie night.

Ingredients
  

  • 1 Store-bought pumpkin cake with cream cheese frosting, or homemade
  • Orange candy melts
  • White candy melts
  • Mini peanut butter cups
  • Shredded wheat cereal, not frosted
  • Edible food coloring marker

Method
 

  1. Prepare the cake mixture. Crumble the pumpkin cake and cream cheese frosting together in a large bowl until completely combined.
  2. Shape the cake pops. Roll the cake mixture into balls and place them on a parchment-lined baking sheet.
  3. Chill. Chill the cake balls until firm enough to dip and decorate.
  4. Coat the cake pops. Melt the orange and white candy melts according to the package directions. Insert the cake pop sticks and dip each cake pop into the melted candy coating. Allow any excess coating to drip off.
  5. Decorate the scarecrows. Add pieces of shredded wheat cereal for the scarecrow “straw” and mini peanut butter cups for the hats. Allow the candy coating to set completely.
  6. Add the faces. Use an edible food coloring marker to draw the scarecrow faces.

Notes

  • Store-bought pumpkin cake with cream cheese frosting is an easy shortcut, but homemade pumpkin cake and cream cheese frosting can also be used.
  • Chill the cake balls before dipping to help them stay securely on the sticks.
  • Add the shredded wheat and peanut butter cup decorations before the candy coating completely sets.
  • Allow the coating to harden completely before drawing the faces with the edible food coloring marker.
  • Cake pop yield will vary depending on the size of the cake and how large you make each cake pop.
