So many delicious baked goods from the “Hannah Swenson Mystery” series on “Hallmark Channel”! These soft and scrumptious cookie sandwiches are inspired by the “Hannah Swenson Mystery: Carrot Cake Murder”. Basically an elevated version of your typical carrot cake, and in cookie form!
Ingredients:
-1 box carrot cake mix
-1 cup vegetable oil
-2 eggs
-1/2 cup raisins
-1/2 cup shredded carrots
-1/2 teaspoon vanilla extract
-cream cheese frosting of your choice (homemade or pre-made)
Directions:
Combine all ingredients (except frosting). Using a cookie scoop, scoop the batter onto a non stick baking sheet and bake at 350 degrees fro 10-12 minutes. Once they are baked and cooled, pipe cream cheese frosting on cookie and top with another cookie. Enjoy!
